Smoothie du Jour



I'm feeling a little under the weather today. I worked 67 hours last week and had 2 huge meetings so I think I'm a little worn out. So today I piled up on the green and made a delicious smoothie for breakfast.  I'm feeling the life come back into my body already! 

In my juicer: 2 small green apples
1 cucumber (with the skin)
1 orange (gotta get that fresh vitamin C!)

Then blended with:
A few handfuls of organic baby spinach (completely tasteless- I promise) 
1 ripe banana
A few frozen peaches (normally I just use ice because I like it nice and cold but we were out of ice so frozen fruit is the next best thing. Not to mention it makes it taste even more delicious!)

If I'm having a smoothie or a juice in a addition to my breakfast I usually won't use so much fruit. Although they're good carbs, fruit has a higher caloric content so I usually substitute oatmeal or an omelet for the fruit and have more of a vegetable based juice or smoothie. One of my favorite breakfast juices is a simple cucumber and apple juice. The cucumber has done WONDERS for my skin and the apple sweetens it up and provides fiber that keeps you fuller longer.

Leather Pleather Weather




The weather has plummeted yet again and I have not been inspired at all when I get dressed. I just want to throw on my favorite pair of men's sweats, a giant sweatshirt and cushy slipper socks and call it a day. Unfortunately that look is frowned upon when worn in public. I know, I've tried it. So this is the next best thing for me. A cozy hoodie paired with my favorite faux leather jacket, stretchy skinnies and an absolute must in any girls closet- a good pair of leather ankle boots. Like I said, I haven't been inspired to get dressed. Well it turns out I haven't been inspired to do my hair either. Beanies are probably my favorite accessory on a gloomy/damp/bad hair day.

Smoothie Nut

I love smoothies. I've never been big on sweets so smoothies have always been my version of a milkshake. Not saying that I don't enjoy a good milkshake now and then. I love shakes. I can actually name my top three favorite shakes right now. And where I always go to get them. Chocolate shake from Carl's Jr., Neapolitan shake from In-n-Out, and a coffee shake from basically anywhere that has it. YUM. Ice cream you can drink through a straw? I mean, come on. What was I even talking about?... Oh right, smoothies. I am in the final week of my 3 week fast (HOORAY!) and I'm sure I've said it before, smoothies and juices have been a crucial part of my diet. I throw just about everything in a blender and drink all of my daily nutrients.
But I've discovered a completely new element to add into my fruit smoothies. I am completely obsessed with.... putting NUTS in my smoothies! Seriously, how did I not know about this before?? My favorites include walnuts and almonds. They add a different texture and the nutty flavor really compliments the fruit. It makes the smoothie more dense and really fills you up. Not to mention that unlike most yogurts and milks, they contain the healthy type of fat that your body can utilize and needs to burn throughout the day. 



A few frozen strawberries, some frozen peach, a handful of raw, unsalted almonds, and a splash of 100% apple juice. See how thick that baby is? So good.

Bulgur Wheat Chili

When I first saw this recipe I was like, "huh? Wheat and chili?" I'm just now venturing into the world of whole grains and had no idea that they were so diverse! I am currently on day 7 of 21 of a fast (feels like day 135) and I'm definitely missing my bread, fish, and most of all- CHEESE! Ahhhh! Now that my dramatic rant is over, I have to say, in all honesty, that I do feel great. Having this discipline has really helped me connect more with God on a deeper level and I can't wait to see how far He brings me come day 21. That being said, I'm still hungry. I've been making juices and smoothies and eating more plain beans and potatoes than I can count! But when all hope for my taste buds seemed lost, my lovely boyfriend swooped in and saved the day (as he often does) and emailed me a list of chili recipes that were all-natural and within the guidelines of my Daniel fast. How great is he?! Here are some photos and the recipe.



The recipe is below but I tweaked a few things on my own. I added some fresh tomatoes, a little more salt, and threw in a bit more spice and seasoning. Also, depending how wet you want it, you may need to add some moisture. The recipe recommends water, I added about 1 1/2 cups of tomato juice to mine which I thought helped maintain the flavors and didn't water it down. 


 Now normally I would load up this bad boy with a brick of sharp cheddar, some red onion and a dollop of sour cream, but considering I can't have dairy, I sprung for avocado instead. It was DELICIOUS. I like my chili on the spicy side so the cool, creamy texture of the avocado was a refreshing twist.



So. Good.

VEGETARIAN CHILI

Serves about 8
Notes: The bulgur wheat adds a great texture here – you can also substitute quinoa for a gluten-free option if desired. The chipotle powder is a bit of a hard to find, but it adds great complexity and flavor!  We recommend using it if at all possible. Ancho chile powder also can add a nice bit of smokiness. Lastly, if 1/2 cup chili powder seems like a typo – it’s not! While it’s a lot to use, it did bring the flavor we were looking for to the dish. Feel free to scale back if you’d like. The resulting chili is not overly spicy (though it might be if you use spicy chili powder, jalapeƱos, or more chipotle powder than specified below); we like going for moderate spice and then giving diners the option to add spiciness at the table with hot sauce.
What You Need
3 15-ounce cans beans OR 4 1/2 cups cooked dried beans – we used black, pinto, and kidney
2 32-ounce cans diced tomatoes
2 4-ounce cans roasted green chiles (or jalapeƱos, for extra spice)
2 tablespoons olive oil
2 medium onions
6 cloves garlic
1 cup bulgur wheat
1 cup frozen corn
1/2 cup chili powder
3 tablespoons oregano
2 teaspoons garlic powder
2 teaspoons kosher salt
1/4 teaspoon black pepper
1 tablespoon honey (or sugar)
1/8 teaspoon chipotle powder (highly encouraged for extra flavor! Add more to taste)
To serve: Hot sauce, sour cream, cheese, cilantro or chives
What To Do
1  Chop the two onions. Dice six cloves garlic.
2  In a large pot or dutch oven, heat 2 tablespoons olive oil. Add the onions and saute until softened, about 5 minutes, stirring occasionally. Add the garlic and saute, stirring, for about 1 minute.
3  Add the rest of the ingredients: beanstomatoes (with their juices), green chiles (orjalapenos), 1 cup bulgur wheat, 1 cup frozen corn, 1/2 cup chili powder, 3 tablespoonsoregano, 2 teaspoons garlic powder, 2 teaspoons kosher salt, 1/4 teaspoon black pepper, 1 tablespoon honey, and 1/8 teaspoon chipotle powder. Mix to combine. If necessary, add a bit of water to make sure everything is covered (we added about 1 cup).
4  Bring to a boil, then simmer until the bulgur is soft, about 20 to 30 minutes. Taste and add additional seasonings as desired. Add hot sauce to taste; serve with sour cream, shredded cheese, and cilantro or chives.

What another BEAUTIFUL day it's been! 81 degrees. Sun shining. Birds chirping. Glorious.

Normally I would pretend that I was being artsy by taking pictures* of my clothes hanging and laying and strewn about the room, however, that would be a lie. Truth: no one was around to take my picture today so this is what I ended up with. Sorry for the terrible selfie. I had a wonderful morning at church with the Blazing Hearts women followed by a great lunch with my mom. Speaking of lunch, I'm hungry for dinner. I think I'll make chili...

HELLO SUNSHINE!!!







The sun is back!!! For a couple of days anyway. I literally leapt out of my bed this morning when I saw that the high was in the 70's! I got this maxi dress on an amazing clearance ($11.49, hello!) while I was Christmas shopping a couple of months ago and have been eagerly waiting for a day like today. My taste buds and stomach enjoyed the holidays a little too much so this loose fitting maxi was the perfect thing to throw on. And what girl doesn't love a dress with pockets?!

Jazzy Oats




Day 4 of the fast? 5? My brain has shut down at this point. I did however have a deliciously satisfying breakfast this morning. I love oatmeal but let's be honest, on it's own it's a tad dull so I added a few extra things to jazz it up a bit. Filling. Nutritious. Delicious. And it looked so pretty! I'm a firm believer that if your food looks good, it will taste good.

-1/2 cup cooked steel cut oatmeal (Anything else is refined and has been stripped of virtually all nutrients.)
- handful of blueberries (One of the highest fruits in antioxidants and I read an article or two on how it reduces belly fat. Flatter tummy? Count me in!)
-1 apple dices into small cubes (Apples are high in fiber and will keep you fuller longer. I recommend staying away from green apples because, personally, I don't like my oatmeal sour. But maybe you do so do whatever you want.)
-a drizzle of Agave nectar (Better for you than sugar because it's organic and it has a lower glycemic index.)
- a sprinkle of one of my favorite spices- Cinnamon!

Squashta...Squash as Pasta

Right now my church is doing a 21-day fast.  Some people are fasting social media, some are fasting TV, others sugar and sweets, and some are fasting food all together. I decided to do a Daniel fast. Basically fruits and vegetables ONLY. Well, it's only day 2 and I was already bored with my smoothies, green juices and raw carrots. Now, I know that no one does a fast to be "enjoyable" by any means, but I was searching for something new and heard about using squash in place of pasta. I stumbled upon this recipe here and it was INCREDIBLE. Seriously. SO delicious. And although I can't believe I'm about to say this being the carb fanatic that I am, but, I would eat this over pasta any day!! I used summer squash as well as zucchini and added some extra seasoning to the sauce. It is healthy, light yet filling, and completely satisfying.
